Thesis Defense in Sausage Making Room

Thesis presentation of OSU Applied Biotechnology and Engineering Faculty took place at meat-processing enterprise.

Nine graduates of "Meat Technology and Meat Products" program prepared well for it. Several future specialists and bachelors developed recipes of original meat products (based on existing) and cooked sausages in the shops of LLC "Myasnaya Dusha" presenting it for degustation by state examination committee after.

"Densaulyk-Zdorovye" — half-smoked horse meat sausages enriched with milk protein and wheat cellulose were recommended for production not only in Orenburg region, but also in Kazakhstan. The product has two certificates at once, successfully passed certification testing in the centers of Orenburg and Aktyubinsk. The examination committee congratulated Valentin Serdyukov, who presented "Densaulyk-Zdorovye" sausage, on excellent assessment for final thesis and diploma with honors.

Dmitry Skorokhodov surprised the jury with the recipe of cooked sausage "Molodezhnaya" where he replaced soy protein by the milk one. Fried sausage "Appetitnaya" enriched with buckwheat cellulose. Cooked sausage with fermented baked milk was very light and dietary. Sausages for baby food without taste modifier were more appetizing than usual sausages with E621.
